    Our cattle are raised on pasture with access to fresh grass or hay and clean water. They are never confined to feedlots, which helps ensure their health and well-being.

    Dry-aged beef is beef that's been subjected to a controlled aging process under refrigeration for extended periods, typically weeks or even months (ours is for 14 days). The purpose of dry-aging goes beyond simply preserving the meat. Here's the breakdown: Intensified Flavor: Moisture evaporation during dry-aging concentrates the natural flavors in the beef, resulting in a richer, nuttier, and more complex taste compared to non-aged beef. Enhanced Tenderness: Natural enzymes present in the beef break down tough muscle fibers over time, making the meat significantly more tender and easier to chew. While dry-aged beef boasts undeniable qualities, it may not necessarily be included in all standard processing due to a few reasons: Cost: Dry-aging adds time and requires specialized equipment, translating to a higher cost for the final product.
